Nutrition : Delicious and healthy raisin bread/cake

Treat of the week: RAISIN BREAD/CAKE !

No matter where you live , if it's warm or cold , no one can resist a hot cup of chocolate/coffee/tea/whatever served with a slice of something really delicious [and still healthy to match your progress and serve your health]. It's a type of cozy pleasure i always give in !



I chose this recipe cause it's hyper delicious , healthy , low fat and can easily be done by anyone .

It's appropriate for people on low fat diet or healthy nutrition so if you're following the challenge i set on past February you can still enjoy it ;)

Let's get started :



You will need :





  • 1 cup of raisins
  • 2 cups of flour ( you can put wholegrain black flour as a healthier option )
  • 2 SEPERATED cups of water
  • 1/4 cup oil ( i used olive oil and it worked great )
  • 1 cup of sweetener ( the original recipe insisted sugar , i used 3/4 brown sugar and 2 spoons of honey instead to make it healthier and easier to digest )
  • 1 tsp. of cinnamon powder
  • 1 tsp. nutmeg
  • 1/tsp. bakin' soda 
  • little salt 


Preparation ? INSTA EASY ^_^






  • Boil the ONE cup of water and all the raisins , together , for 15 minutes . Then remove the mix from heat.



  • Then , take a large bowl and add all the solid ingredients ( flour , sugar , cinnamon , nutmeg , soda and salt ) . Make a homogenised mixture .



  • Pour the second .unused , cup of (cold) water , the oil and the boiled combination of water and raisins . Stir them all together gently ( i used just a spoon for this process )



  • When everything is mixed smoothly it's baaaaking time !


You can either use a large baking pan ( 32 x 25 cm ) or separate the mixture in two smaller . I chose the second option because i didn't have a larger one and also the cake would have more space to be properly baked across the whole surface .





  • Bake your cake(s) in preheated oven , on 175 degrees C for aprox. 1 hour . 


Check regularly using a knife to see if it's ready .




Tadaaaan ! 


SUGGESTION ! 
You can serve it single or add some peanut butter on top ! It is yummy , divine and heavenly delicious and will leave you free of guilt since the ingredients are not as processed as regular cakes !
